I though I’d put a picture of the Dublin Coddle I have simmering on my stove. I write about my characters buying the ingredients for this meal. It is a dish you can only find in Dublin and the smell of it cooking plus the familiar taste takes me straight back to my childhood. It’s a great cold day meal and the longer it cooks the better it tastes.
My mother prepared this dish on Saturdays, it is a come and come again meal which meant my Mom could be free of the stove for one day. We just served ourselves whenever we returned home from where ever we were.
